Vanilla and rum chicken

Instructions :

Step 1
In a large bowl, combine the lime juice, rum, honey, minced garlic, vanilla seeds and a little salt and pepper.

Add the chicken thighs to the mixture and make sure they are well coated with the marinade. Cover the bowl and leave to marinate in the fridge for at least 1 hour, or even overnight for a more intense flavour.
Step 3
Heat the olive oil in a large frying pan or casserole over medium heat. Add the marinated chicken thighs (reserving the marinade) and brown on all sides, about 5 minutes per side.
Step 4
Add the chopped onion to the pan and sauté until translucent.

Pour the reserved marinade into the pan and bring to the boil. Reduce heat, cover and simmer for about 30 to 40 minutes, or until chicken is cooked through and tender. Stir occasionally and add a little water if necessary to maintain the cooking liquid.

Once cooked, adjust the salt and pepper seasoning to taste.
