Ingredients
Serves 4
Panna cotta :
- 500 ml liquid cream
- 100 g powdered sugar
- 1 vanilla pod, split and scraped
- 4 gelatin sheets
For the strawberry garnish :
- 250 g fresh strawberries, washed, hulled and diced
- 2 tablespoons powdered sugar
- Juice of half a lime
- A few fresh mint leaves for decoration (optional)
Instructions :
Step 1
Pour the cream into a saucepan and add the caster sugar and vanilla pod seeds. Heat over medium heat, stirring constantly, until the sugar has completely dissolved. Do not allow to boil.
Step 2
Meanwhile, soak the gelatine leaves in cold water for about 5 minutes to soften them.
Step 3
Once the cream mixture is hot and the sugar has dissolved, remove the pan from the heat. Squeeze the excess water from the softened gelatine leaves and fold into the hot cream mixture. Stir vigorously until the gelatine has completely melted.
Step 4
Pour the panna cotta mixture into individual ramekins or dessert glasses. Cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours, or until firm.
Step 5
While the panna cotta is setting in the fridge, prepare the strawberry topping. In a bowl, mix the diced strawberries with the powdered sugar and lime juice. Leave to marinate in the fridge for at least 30 minutes to allow the flavours to blend.
Step 6
Just before serving, spoon the strawberry filling over the top of each cooled panna cotta. Garnish with a few fresh mint leaves, if desired.
Step 7
