Ingredients

- 4 ripe kiwis, peeled and cut into pieces
- 200 ml full-fat cream
- 50 g powdered sugar
- 1 vanilla pod, split and scraped
- 3 sheets gelatin
Instructions :
Step 1
In a blender or mixer, blend the kiwi pieces until smooth. Strain the kiwi purée to remove the seeds and obtain a finer texture.
Step 2
Pour the cream into a saucepan and add the caster sugar and vanilla pod seeds. Heat over medium heat, stirring until the sugar has dissolved and the cream is hot but not boiling. Then remove from the heat.
Step 3
Soak the gelatine sheets in cold water for about 5 minutes to soften them.
Step 4
Squeeze the excess water from the softened gelatine leaves and add to the hot cream. Stir well until the gelatine has completely melted.
Step 5
Stir the vanilla kiwi purée into the vanilla cream and blend gently until smooth.
Step 6
Pour the kiwifruit mousse into verrines or small bowls. Cover with cling film and refrigerate for at least 4 hours, or until the mousse is set and firm.
Step 7
Before serving, garnish the kiwifruit mousse with a few slices of fresh kiwifruit or white chocolate shavings for a decorative touch.
